Kale Burgers

-from the kitchen of CSA member, Beth

We put kale in burgers, and it was awesome! Here’s the recipe.

1 pound (or less) of raw kale, chopped up in a blender or food processor

6 cloves (or less) of garlic, chopped up in a blender or food processor, or with a knife (optional)

2 pounds ground beef or turkey

2 eggs

Salt

Pepper

Form meat into patties of 4-5 inches diameter  Place on a foil lined baking sheet in a 400 degree oven for 10-15 minutes.
Other dry vegetables can be substituted for kale, and herbs added — shredded onion or pepper with liquid squeezed out, or shredded carrot, thyme, cilantro — but total vegetable content should not exceed half the quantity of meat. Burgers will be too crumbly if there is too much vegetable.
