Freezing Greens
This method can be applied to greens such as spinach, kale, mustard greens, swiss chard, arugula, and escarole.
Peeling Tomatoes
Peeling tomatoes is a step in making salsa, tomato sauce, and canning whole tomatoes.
Note: this will only work for ripe tomatoes. The tomatoes I use in the video are ripe Green Zebra tomatoes, not green tomatoes.
Making Basil Pesto to Freeze
This is a great way to preserve basil when you have a lot! We love getting the fresh basil flavor in our recipes in the winter!
You can also add garlic with the basil, olive oil, and salt.
I use this for homemade pesto pizza sauce without adding cheese since there is already so much cheese on pizza. I also like to drop a piece into tomato soup or sauce. And of course, you can add pecorino cheese (and optional pine nuts–but Stephen doesn’t like these, so we never add them) to make a pesto sauce for pasta!
