Lemon basil Summer squash dip

Ingredients:

4 to 8 cups grated summer squash

4 to 8oz goat cheese

12 to 24 oz yogurt

4 to 8 stems lemon basil

Salt

Pepper

Thyme

Recipe:

Grate summer squash.

Sprinkle salt on top of squash and massage.

Press out the excess juices of the summer squash.

In a mixing bowl, blend goat cheese and yogurt.

Add strained squash and mix.

Pound in mortar and pestle (or chop) lemon basil and pinch of salt.

Add lemon basil to mixing bowl.

Add pinch of thyme (as desired).

Salt and pepper to taste.

Chill before serving.
