Callaloo and Lion’s Mane Steak

Lion’s Mane mushrooms cut into patties about 1/4th inch thick

Half a bag of Callaloo – bag is the size you sell

One large garlic clove, sliced thin

Your favorite olive oil – I used Spanish due to its sweeter flavor

Everything Bagel seasoning

Put the sliced mushrooms into a medium or large size skillet along with the garlic, Callaloo and a generous shaking of the Everything Bagel seasoning. Pour the olive oil over the ingredients (about a quarter cup) and let stand for a few minutes while the stove burner gets hot (Medium High). Put the skillet on the stove and as the contents warm, pour another quarter cup of olive oil into the skillet. Stir the ingredients frequently. The object is to get a sear on both sides of the mushrooms and wilt the Callaloo to the texture you desire. I crisped it along with the garlic slices. Serve immediately.
