The quantities are so large for this recipe because I first made it for a party of ten to 16 people 3 or 4 years ago. Please scale it accordingly to your party size.
Mix and massage: 1 Tablespoon Celtic Sea Salt (or course salt of choosing) and a 2 lb mix of cruciferous greens (e.g. kale, mustard greens, cabbage, arugula, etc)
Mix with that in salad bowl:
16 garlic scapes to taste chopped thinly into dimes
10-16 radishes sliced thinly
1 cup +/- chopped mint
2 cups chopped pistachios or nut of choice
Dressing: Whisk together:
2 cups sour cream
1/4 to 1/2 cup maple syrup
juice of 3 limes
hint of red wine vinegar (optional)
